Happy Sigh…I have just returned from a fabulous holiday in Barbados with my family and friends, recharging my yogi foodie batteries and feel great! Highly motivated, excited and inspired to share with you some exciting news with you all…

Starting Monday February 25th I am launching ’14 Days of Simplicity’ that’s right each day when you log onto my blog you will be greeted by either a new recipe, new food tip, new quick yoga routine, pilates slimmer session, sculpted sweat session or muscle work therapy ball routine. Some of these will come to you through words, through images and some through videos!

So why am I doing this for YOU?

Because I think you are incredible and I want to see you succeed on your health and wellness journey, more importantly I want you to see what I see when I look at you…one smokin’ hot, confident, strong, healthy kick-ass individual who knows how to feed, move and groove your body right!

To get you started, here is a quick dish to add to your dinner tonight:

Marinated Portobello Mushrooms

3-4 Portobello mushrooms (depending on their size), cut in half and sliced thinly

2 tbsp. olive oil

tbsp. freshly squeezed lemon, lime or orange juice

tbsp. tamari or Bragg’s

small clove garlic, minced

inch ginger, finely chopped

tsp. dried tarragon

sea salt  & pepper to taste

Mix all wet ingredients together in a glass dish, add mushrooms and toss gently. Let sit covered for 20 minutes.

Lightly heat a medium pan and pour all ingredients in. Stirring often sauté until your desired texture, usually about 7-10 minutes. you may need to add a bit of water if you are hearing searing from the pan. Add a little at a time, if needed.

You can easily use this dish as a side or if you are vegetarian or vegan this could serve as your ‘meat’ part of your meal over some beautiful fresh or steam greens, seasonal veggies or pasta.
