The Vibrant Life Plate
Welcome to Day 11 of ’14 Days of Simplicity’, talking today about one of my favourite subjects – salad!
I enjoy nothing more than a beautiful, lush salad full to the brim with colour, different textures, flavours, herbs and homemade dressings. I always get so excited when a nutrition client tells me how boring their daily lunch time salad is, because then I have the opportunity to teach them how to create ‘The Vibrant Life Plate’, a salad so incredible they will soon be craving this plate of awesome instead of dreading it.
When you build the type of salad I am going to describe to you, you will feel so satisfied, so balanced and so energized that you will completely understand why I call this ‘The Vibrant Life Plate’
Start with:
- A bed of lush greens like baby kale, spinach, baby greens, dandelion greens or arugula
- Thinly sliced organic yellow, red or orange peppers
- Shredded red cabbage
- Sliced cucumber
- handful of grape tomatoes
- 1/2 avocado, cubed
- 2 tbsp raw pecans or walnuts or almonds
- 2 tbsp hemp seeds, or sunflower or pumpkin seeds
- optional: 2 tbsp herb goat cheese or goat feta
Jenn’s Favorite Dressing
- 2 tbsp Olive oil
- 1 tbsp apple cider vinegar
- 1 tsp dijon mustard
- 1 tsp maple syrup
Add together in a small mason jar, shake and serve over ‘The Vibrant Life Plate’
This is a salad you will want to show off, a salad your family and co-workers will say they wish someone had made them and a salad that will feed your body, satisfy your taste buds and get you on your way to feeling more VIBRANT in your everyday!
