DIY Dried Soup Mix
This is the third part of our gift-giving series, simplicity style. Sharing mindful gift ideas for the health lover in your family. This week I am sharing a recipe for DIY soup jars, where you can create a dried soup mix in a jar and share it as a hostess gift, teachers gift, or simply to extend as a thank you. These jars turn out beautifully when you put each layer into the jar separately.
Spiced 5-Bean Soup Mix
- 1 litre, wide mouth mason jar
- 3/4 cup dried lentils
- 3/4 cup dried green mung beans
- 3/4 cup dried black beans
- 3/4 cup dried black eyed peas
- 3/4 cup dried kidney beans
- 3/4 cup of dried pasta (optional)
- 1 tbsp onion powder
- 1/2 tbsp garlic powder
- 1 tbsp of cumin
- 2-3 tbsp smoked paprika
- 2 bay leaves
- Add each ingredient into your wide mouth mason jar.
- To make the soup: dump the jar into your crockpot.
- Add 1.5 litres of vegetable stock. It should be enough to cover the beans, plus an extra 2-3 cups of broth (depending on how soup-y you like it).
- Add 2 cups of chopped bok choy
- Add 1 cup of sliced cremini mushrooms.
- Leave it on the low setting (8-10 hours).
