Super Greens For A Super Body!

Stock up on your greens today when you do your grocery shopping!!

These should be the centerpiece of any diet, plant-based or meat-eating. Rich in nutrients such as iron, calcium, magnesium, folate, protein and fibre; they also help our immune system, provide antioxidant protection and  rejuvenate our cells. Being so crazy rich in nutrients and low in calories, these beauties should be a main staple of each meal in your everyday to keep your body nourished, satisfied, yet not overburdened by excess calories and work for your digestive system!

They can be used in green juices, smoothies, salads and so much more! Keep a variety of greens washed and stored in glass containers to help them remain crisp. Darker greens such as kale, collards, spinach and chard are great for steaming or sautéing. For salads, arugula, romaine, and bib lettuce are great to have at the ready. Kale is also wonderful for salads but make sure you “massage” it first with some healthy olive oil, flax oil or hemp oil, avocado is also great to break down the texture and make it easier to chew!

Here is a great recipe from my book The Simplicity Project to enjoy tonight and ensure you get those body loving greens in!

Kale, Red Cabbage, Beet and Carrot Salad

1 Large head organic Kale, stem removed and finely chopped

1 leek, finely chopped

1 cup, shredded red cabbage

1 beet and 1 carrot, each grated

1/2 cup mixed (combined) dried cranberries, raw pumpkin seeds, hemp seeds and pecans

Mix with Jenn’s Favourite Dressing PLUS avocado

1/3 cup Olive Oil

2 Tbsp Apple Cider Vinegar

1 tbsp fresh orange or lemon juice

1 tbsp maple syrup

1 tsp Dijon Mustard

sea salt & pepper to taste

Place all ingredients PLUS 1 ripe avocado and 2 Tbsp of water into your blender and blend until creamy smooth.

Taste and adjust seasonings to your liking.

Mix through your salad and savour the yumminess!
