Ginger Apple Crisp…sooooo yummy!

I made this for desert on Sunday for Oscar night and it was a real hit!

Low in sugar, high in fibre and stacked in taste.

Ginger Apple Crisp (4-6 servings)

4 apples, thinly sliced

2 tbsp fresh lemon juice

1/2 tsp cinnamon

1/8 tsp nutmeg

Topping:

6 tbsp ground flaxseed

1/4 cup water

1″ginger, finely minced

1 1/2 cups oats

1 tbsp organic sugar

1 tbsp Bob’s Red Mill All PurPose gluten-free flour

1/4 tsp cinnamon

1/8 tsp nutmeg

1/4 cup Greek Yogurt

PREHEAT your oven to 400′

Toss apples with lemon juice, cinnamon and nutmeg.

Lightly coat 8×8 glass baking dish with coconut oil. Spread the apples evenly in the dish.

Mix the flaxseed with water in a small bowl and let sit to form a gel.

Combine ginger and remaining dry ingredients, PLUS the flax in a medium bowl. Add yogurt and crumble the mixture with your fingers so it clumps. Add more yogurt or water if needed.

Spread your crumble evenly and bake for 20-25 minutes
