For All the Mama’s

Today, I wanted to throw back to an older episode of Simplicity TV. This one was created for Mindset Monday’s, but I think it’s a perfect message to share this weekend, ’cause it’s for all us Mama’s out there.

It’s a message of love and compassion, and one where I’m going to say – go easy on yourself. You are doing an amazing job. You are simply amazing. I know how easy it is to judge yourself for not being ‘enough’, not enough of a cook, not crafty enough, not clean enough – whatever it is, I want you to know that you are enough. It’s time that we lift each other up, cheer each other on, and support each other along the way.

No matter where we’re at or where we come from, we all want the same things; happiness, joy, love and we most definitely want more simplicity and ease in all that we do.

And since I know a lot of you beauties looovvee chocolate, I want to share a new recipe I tried this week (it’s a must-share).

Try something new for dessert this Mother’s day, with this decadent, rich and vibrant chocolate mousse (created by my friend and colleague Joy McCarthy). This recipe is so simplicious — which means its simply YUM! It’s also packed with fiber, healthy fat, plant-based iron and gut-pleasing chia seeds.

Chocolate Chia Mousse (serves 4)

  • 4 medjool dates, pitted
  • 1 can (14 oz/400mL) full-fat coconut milk*
  • 1/2 cup raw cacao powder
  • 1/4 cup chia seeds
  • 1/4 cup real maple syrup
  1. Soak dates in water to cover for 2 hours. Drain.
  2. In a high speed blender or food processor place dates, coconut milk, cacao powder, chia and maple syrup. Blend until fully combined. Pour pudding into individual serving bowls. Cover and refrigerate for at least 4 hours.
  3. Garnish with coconut flakes and berries.

For best results, use organic, full-fat canned coconut milk because it should be thick and creamy. Tetra pak coconut milk will yield a runny consistency. You can do it but you’ll just have to add more chia seeds.
