Cinnamon Maple Pecan Milk
This non-dairy milk is nice in the winter as it tastes somewhat festive to me – maybe because it reminds me of eggnog…
I made this to go with breakfast this morning (scrambled eggs, fruit & manna bread) and it was so delicious I just warmed a mug up for myself while I do some writing and I thought I would share the recipe.
1 cup raw pecans, soaked for 2 hours or more ( I left mine overnight)
3 cups filtered water
1/4 cup maple syrup + 2 tbsp
2 tbsp coconut butter/oil
2 tsp vanilla extract
1/4 tsp ground cinnamon
freshly grated nutmeg to taste
pinch of sea salt
Vita-mix is best for this, but you could also use a high-speed blender, no bullets for this one! Blend the nuts and water on high 2-3 minutes. Add remaining ingredients and blend to combine. Taste for sweetness and enjoy!
