Celebrating Earth Day With Inspirational Food Choices
Happy Earth Day to you all!!!
We celebrate with gratitude and respect, the beautful places we live today. It is the perfect opportunity to get outside and enjoy the fresh air; gardening, hiking, running, rollerblading, biking, walking or cozying up on the deck with a warm drink and good company.
But you can also thank the environment you live in by shopping, preparing and eating a little more consciously today.
Instead of travelling from store-store using expelling extra fumes from your vehicle; why not look over the flyers and hit one store that will allow you to price match them all? Not only will this cut down on your environmental footprint but it will also cut down on your grocery bill.
When you prepare your meals and snacks today try use as few appliances, or at least large ones as you can so that you cut down on your electricity and energy impact. If you need to heat something up or cook something small try using your toaster oven or steaming quickly.
Become vegetarian or vegetarian-ISH today!
For Breakfast make a big fruit salad with some Greek yogurt & hemp hearts
For Lunch make a delicious wrap using hummus or mashed black beans, with sliced avocado, thin strips of red and yellow peppers, cucumber some dijon mustard topped with spinach and arugula. Serve with fresh veggies, olives and marinated beets on the side.
For Dinner try the Raw Pad Thai dish under recipes on this blog that I posted a few months back or the amazing Scallop and Bok Choy I posted just a few weeks back. The only heat required here is sautéing the scallops for a few minutes per side.
For healthy snacks try smoothies, fruit with raw nuts, organic yogurt and small bit of organic granola, healthy bars and bites, organic nachos and salsa or guacamole…
Most importantly today choose to celebrate this incredible world we live in with people you love, people who make you laugh, people who contribute to the amazing person you are and with those that will enjoy the level of love, care and passion you put into the food you prepare.
