I’ve always been a banana bread lover.

That soft, sweet-but-not-too-sweet loaf always gets devoured quickly in my house hold.

But over the years of studying nutrition, and avoiding the most common food triggers (gluten, dairy and eggs) I have had to refine, and re-create the recipe to accommodate my clients. I still wanted to create the impeccable taste and texture of everyones favourite banana bread.

And I think I hit the spot with this one!

Jenn’s Best-Ever Banana Bread (Gluten Free + Vegan)

Ingredients:

  • ¼ cup non-dairy milk
  • 6 Tbs. olive oil or avocado oil or coconut oil
  • 1/3 cup organic sugar or 4 Tbsp maple syrup
  • 4-5 organic bananas
  • 2 cups gluten free flour ( I like Bob’s Red Mill)
  • 1 tsp. aluminum-free baking soda
  • 1 tsp. baking powder
  • ½ tsp salt
  • ½ cup non-dairy Enjoy Life chocolate chips (optional)

 

  1. Preheat to 350F.
  2. Lightly oil an 8×8 pan or use parchment paper to line.
  3. Put the oil, milk, bananas and sugar or maple syrup in the blender and blend until smooth.
  4. In a large bowl, combine dry ingredients.
  5. Add the wet to the dry and combine well.
  6. Fold in the chocolate chips (if you are using them).
  7. Pour into your pan and bake 30-35 minutes or until a wooden toothpick comes out clean.
  8. Cool before slicing to enjoy!
