With more and more people discovering that they have wheat and gluten sensitivities its nice when you can find a little ‘treat’ that won’t have you in agony afterwards and that might actually be good for you!

These are simple to make, loaded with protein, complex carbs and stress-busting B-vitamins.

1 cup cooked quinoa

1 cup uncooked quinoa flakes

1 cup unsweetened coconut, shredded

4 very ripe bananas

1/2 cup maple syrup

1/2 cup dark, unsweetened chocolate chips (or raisins or walnuts)

tsp vanilla

pinch of salt

Pre-heat oven to 380`. In large bowl, mash bananas with a fork and add vanilla and maple syrup. Add quinoa, coconut and a pinch of salt. Mix until combined. Stir in chocolate chips and/or raisins. Line baking sheet with parchment paper and drop batter onto cooking sheet. Bake for 25-30 minutes. Remove from oven and let cool.
