Cut the B.S Wednesday – Power Green Edamame Salad
This week on #SimplicityTV we are back in the kitchen, and we are making a power green edamame salad.
Power Green Edamame Salad (serves 2-4)
- a small bin of mixed organic greens (or baby kale, spinach, organic romaine, whatever greens you have on hand)
- half cup of edamame (steamed)
- ½ yellow bell pepper
- ½ cucumber
- a handful of pea shoot sprouts
- a handful of snap peas
- ½ cup pumpkin seeds
- 1 tbs of hemp seeds
- 1 tbs of sunflower seeds
- optional: pear or mango for a sweet kick
Dressing:
- 2 tbs olive oil
- 1 tbs apple cider vinegar
- 1-2 tbs of honey mustard
- Salt and pepper to taste
Toss this salad and serve with our Creamy Cashew Carrot Soup.
