Mango Spinach Summer Time Salad
I made this for lunch today and it was beyond delicious and so satisfying. Be sure to dress it up pretty with a nice bowl or plate, decorative napkins, a great placemat and of course some inspiring company!
Mango Spinach Salad
Organic bin of pre‐washed spinach
3 cups of arugula
1 mango, peeled, julienned
1/2 cucumber, julienned
1⁄2 red onion, cut in half and julienned
1⁄4 cup slivered almonds
1 cup sunflower sprouts
Dressing
1⁄2 cup extra virgin olive oil
1⁄4 cup brown rice vinegar
1 Tbsp honey
3 Tbsp orange juice (optional)
2 Tbsp sesame oil
1⁄2 tsp salt
Mix all of the dressing ingredients together in a mason jar and shake well. Pour over the salad and enjoy!
