Black Bean Rice Burritos
I recently included this food inspiration in my 21 Day Community Detox held at my studio Simplicity Yoga & Fitness Therapy Studio. I did not however include a recipe for it…why you ask? Well, I tend to be less of a recipe person and more of a ‘what do I have, what I have I made in the last few days that I can use in a new dish’ kind of person:)
It makes cooking, creating and eating healthy so much easier when you can just take a multitude of fresh, colourful and healthy ingredients that you have on hand and make a nutritious meal for all to enjoy. I tend to forget though where I am in my holistic food and living journey and often need to remind myself that others starting out need slightly more direction and help in the beginning, so here is the ‘recipe’ below.
You can make this for one or just keep adding ingredients to make the serving larger for more people to enjoy.
What you need:
wraps (Ezekiel are my favourite, but whole wheat flax are okay too)
fresh or leftover brown rice
finely chopped leeks or onion
finely chopped red peppers
organic drained and rinsed black beans
spice combo of cumin, sea salt, paprika and touch of cayenne or chill powder
olive oil
spinach or greens for extra crunch and nutrients
grated goat cheese
guacamole and salsa for garnish
How:
There are no measurements for this because it depends on how many people you are making this for. Add a little or a lot of the above into your pan depending. Worse case scenario; if you make too much now you have tomorrow lunch or dinner already prepared.
Saute your veggies in olive oil. When they are nearly done add in your rice, beans and spices to heat through. Layer your spinach or greens in your wrap and fill with about 1/2 cup of your bean/rice mixture, maybe more depending on how well your wrap holds and top with grated goat cheese.
Garnish with your choice toppings and serve with a medium size green salad on the side
These are so great, you can serve them warm and fresh and cold for lunch the next day.
