Oven Roasted Chickpeas. A High-Protein, High-Fibre Snack That Everyone Will Love!

These are incredibly easy to make and they won’t last long!

I made these up yesterday and had I known how much everyone would love them I would have made 4x the amount. They became like the new bowl of ‘peanuts’ in the room, everyone kept coming back for more:)

So this is how easy these gems are to make:

  • Preheat the oven to 325′ and line baking sheet with parchment paper.
  • You will need 1 can of Eden Organic Chickpeas, drain and rinse well
  • 2 tbsp of melted down coconut oil
  • 1 tsp cinnamon
  • 1/2 tsp each cumin, coriander and sea salt

Combine everything in a glass bowl until coated, toss onto your lined cookie sheet and bake at 325 for 60-70 minutes stirring every 15 minutes.

The above recipe makes enough for maybe a family of 4’s hungry hands, but from now on I will definitely make bigger batches and keep on hand for healthy snacks. How great are these for your kids lunches?!
