A few years ago when I hosted my first ever yoga retreat, we made this dish and it was unbelievable! Most of the ladies turned their noses up initially when I said we’d be eating tofu but by the end of the meal they were literally scraping and licking their plates.

Tofu often has a bad rep for being a boring, vegetarian alternative to meat. It also has a bad rep in the health world, as it is one of the top GMO foods, especially any soy products that come from the USA. That is why it important for you to choose organic, Canadian soy products, and if you can get your hands on some, go for sprouted tofu. Including some organic and sprouted tofu a few times a month might be a great and tasty way to incorporate more meatless meals into your household.

For those of you who are afraid to try cooking with tofu, this recipe will not let you down. For anyone out there avoiding soy due to allergy, estrogen dominance or sheer dislike, use the same seasonings called for on the tofu but instead use cubed chicken, tempeh or some black beans…it will be absolutely delish!

Spicy Stir-fried Tofu with Coconut Rice (from Vegetarian Times Magazine)

Coconut Rice:

  • 1 tbsp sesame oil
  • 1 small onion, chopped
  • 1 tbsp fresh ginger
  • 1 small clove garlic
  • ½ tsp tumeric

Saute above ingredients in a large pot with lid for about 5 min, then add the ingredients below:

  • 1 ¾ cups basmati rice
  • 15 oz. can low-fat coconut milk
  • 2 cups water
  • ½ tsp grated lime peel. (squeeze the lime and reserve 2 tbsp for the tofu)
  • ½ tsp salt
  1. Bring to a boil over high heat. Cover and reduce heat to low, simmer for 15-20 min.
  2. Prepare tofu while waiting for rice to cook.

Tofu:

  • 1 package of extra-firm tofu, cut into cubes*
  • 1 tbsp coriander
  • 1 tbsp cumin
  • 1/2 tsp salt
  • 2 tsp sugar
  • ½ tsp paprika
  • ¼ tsp cayenne
  • 2 tbsp coconut oil
  • 4 green onions
  • ½ cup cilantro
  • 2 tbsp fresh lime juice
  1. Mix above spices in a large bowl. Add tofu and gently toss to coat. Heat oil in a large skillet and add tofu, stir-frying until crispy. Add the green onions, lime juice, and cilantro and cook for a couple more minutes.
  2. Serve tofu over top of your coconut rice.
  3. Garnish with fresh herbs. Ideas: cilantro, parsley, basil, thyme, dill
