For this Mindset Monday, I’m sharing a simple recipe for how to spike your pancakes with protein and delicious sweet potatoes, to create a glycemic-balanced pancake. These flap-jacks will keep your blood sugar levels stable and your hormones happy, but above all – they are yummy!

Oatmeal-Sweet Potato Pancakes

  • 4 egg whites
  • 1/3 cup of mashed sweet potato
  • 1 organic whole egg
  • 1/3 cup cup organic oats
  • 1 tsp. cinnamon
  • 1 tbsp of coconut oil
  1. In your pan, heat up your coconut oil.
  2. Mix your ingredients into a bowl or chuck it all into the pan and stir. Whatever you prefer! If you want them to look uniform, mix them in a bowl first.
  3. Scoop your batter into your pan, and fry on one side until the pancake begins to bubble. Flip onto its other side, until the pancakes are cooked thru, about 5 minutes.
