For this Mindset Monday, I’m sharing a simple recipe for how to spike your pancakes with protein and delicious sweet potatoes, to create a glycemic-balanced pancake. These flap-jacks will keep your blood sugar levels stable and your hormones happy, but above all – they are yummy!
Oatmeal-Sweet Potato Pancakes
- 4 egg whites
- 1/3 cup of mashed sweet potato
- 1 organic whole egg
- 1/3 cup cup organic oats
- 1 tsp. cinnamon
- 1 tbsp of coconut oil
- In your pan, heat up your coconut oil.
- Mix your ingredients into a bowl or chuck it all into the pan and stir. Whatever you prefer! If you want them to look uniform, mix them in a bowl first.
- Scoop your batter into your pan, and fry on one side until the pancake begins to bubble. Flip onto its other side, until the pancakes are cooked thru, about 5 minutes.
