Quinoa, pronounced (keen-wah), is a super food all of its own. Though neither a grain nor a grass, Quinoa is referred to as a grain because it cooks and looks like one, even though it is related to the beets, spinach and tumbleweeds families.

This delicious, nutty-tasting little morsel is so wonderful because it is 100% gluten-free, a rich source of protein, high in fibre, a great source of complex carbs and contains all 9 essential amino acids, magnesium, iron, calcium and phosphorus.

Quick Quinoa Porridge ( This will serve 4 or make for fabulous leftovers)

2 cups of unsweetened almond milk

1/2 cup quinoa

1/4 tsp cardamom

1/4 cup combined raisins and chopped organic apricots

2 tbsp raw almonds and some fresh organic berries

Pour 1 cup almond milk into small/medium saucepan. Bring to a boil. Rinse quinoa and then stir into almond milk with cardamom. Cover and bring back to boil. Reduce heat and simmer for 12 minutes. Fluff with a fork and remove from heat.

Stir in extra almond milk a little at a time, until you achieve your desired consistency. Add in your fred fruit and raw almonds. Spoon into your bowl(s) and top with berries.

For a touch of sweetness you can drizzle some raw obey or maple syrup over top.
