As you’ve probably learned, I love batch cooking. I crave simplicity in my life, and batch cooking helps to make that happen, at least in the kitchen!  When I open the fridge, I aim to have a variety of protein, healthy fat and complex carbohydrates that I can chuck into one bowl to create a balanced meal in minutes.

Today for your Mindset Monday, I want to give you some ideas about how to batch cook your meals in a way that makes it easier for you to build meals upon meals after just one session in the kitchen.

Some ideas for batch cooking:

  1. Roasted veggies – roast a tray of sweet potatoes, carrot, parsnips and brussel sprouts. From here you can eat the roasted veggies as a side dish and use them for the next day as a salad topper.
  2. Organic chicken breast – in the cooler months, I will include some organic chicken breasts into our meals every now and then. If you’re cooking up 1 chicken breast, you may as well cook up 10! That way you can use the left overs to make lunches and dinners for the week ahead. You can easily swap chicken breast with boiled eggs, grilled fish, or pan fried tempeh.
  3. Soup – in a pinch, I like to have an organic soup on hand. If you have a plain soup like butternut squash or tomato, you can simply chop up your chicken breast and toss your roasted veggies in to make a whole new meal.
