All I can say is yum…and break out the mints after eating this one! Oh, but the garlic breath is so worth it. This is a fabulous, healthy dish to serve with a large green salad


5 cups diced tomatoes
1 cup diced white or sweet onions
¾ cup roughly chopped basil
4 1/2 oz uncooked fresh angel hair pasta
12 oz shredded mozzarella cheese 

¼ cup red wine vinegar
2 tbsp olive oil
3 cloves garlic, minced
1 tsp sugar

1. Cook pasta to al dente, drain and let cool.
2. Whisk together dressing ingredients.
3. Combine pasta, tomatoes, onion, basil, dressing and cheese.
4. Cover with plastic wrap and let stand at room temperature for 3 hrs.
