This super-easy and colorful salad is great as a meal on its own or as a side dish to a healthy portion of a great vegetarian meal, chicken, fish or lean meat. I also love it stuffed into a wrap with greens or a shelled out avocado over a bed of greens…Yum!

Black Bean Avocado Salad

1 red pepper, diced

3 stalks of celery, chopped

1 can black beans, rinsed

1 cup corn

½ cup cilantro, chopped

1 avocado, diced

2 tbsp olive oil

2 tbsp lemon juice

1 tbsp grainy Dijon

Mix oil, lemon juice, and Dijon in the bottom of a large bowl. Add pepper, celery, beans, corn, cilantro, and avocado and stir to mix. Serve at room temperature.
